Product Description
Monosodium glutamate is a delicious seasoning, which is easily soluble in water, and its aqueous solution has a strong flavor. With salt, Monosodium glutamate tastes fresher.Monosodium glutamate can be made from wheat gluten and other proteins, or from pyroglutamate contained in starch or beet molasses. It can also be synthesized by chemical methods.Monosodium glutamate can also alleviate alkali, acid and bitterness.
Application
Flavouring agent
When sodium glutamate is used as a seasoning agent, the general dosage is 0.2% to 0.5%. Unless used separately, it is advisable to mix with nucleic acid seasonings such as ribonucleotides and sodium inosinate to form a composite seasoning to improve the effect. Sodium glutamate is the most widely used freshness agent, which can enhance its flavor when coexisting with table salt. When used together with sodium 5 ‘- inosinate or sodium 5’ – guanosine, it has a multiplier effect.
Sodium glutamate has a strong meat flavor, and monosodium glutamate can still feel its freshness when diluted to 3000 times with water. It is widely used in households, the food industry, and food processing industries (soups, sausages, fish cakes, spicy soy sauce, canned goods, etc.). Sodium guanylate and sodium glutamate are used together, which have a synergistic effect and can enhance the freshness. It is also known as a freshness aid or strong monosodium glutamate.
